Hot smoked mackerel and dill spaghetti recipe
Smoked mackerel is full of Omega-3 oils, which are believed to help lower blood pressure, help prevent arthritis and even reduce the risk of cancer. This is a very quick and easy supper which would go well with a simple salad and crusty bread. Serves 4.
Ingredients:
- 160g hot smoked mackerel
- 100g frozen peas
- 1 small onion, diced
- 2 cloves garlic, finely chopped
- 2 tbsp oil
- 4 tbsp crème fraiche
- 50ml white wine
- small bunch fresh dill, roughly chopped
- 400g spaghetti
- salt and freshly ground black pepper
- wedge of lemon to serve
Directions:
Heat the olive oil in a pan and add the onion and garlic. Cook for 2-3 mins until softened. Add the mackerel, crème fraiche, dill and peas and season well with salt and plenty of black pepper. Cook for a further 2-3 mins until the peas are tender.
Cook the spaghetti as per packet instructions. Drain, leaving about 4 tbsp of water. Mix everything together and toss until the spaghetti is well coated.
Serve in warmed bowls with a wedge of lemon to squeeze over.
